How to edit outlined text in a PDF file saved as Illustrator document- CS3? 09/15/2011 17:46 by Kate Johnstone: Hi, I have a client who owns a restaurant and wants me to create a template for his original menu so he can "plug in" specials menu items. He sent me a PDF of the document. I opened it in Illustrator and saved the PDF as an Illustrator Document. There are 2 fonts which I don't have, and the text is all in outlines. He said if I didn't have the fonts, to just use a similar font that I have. Is there any way I can accomplish this without starting from scratch and re-creating the whole document? If you has adobe photoshop, you can try to use it to save this pdf document into Jpeg images. Then import these jpeg images into Adobe Illustrator. This will help you edit the text font better. Or try to download and install those fonts you lack.

Any of all, you should keep your editable copy as an AI file before you convert text to outlines and save the file as an Illustrator EPS file. This will save a lot of time in case that you need to come back and make other works.

After the text has been convert to outlines, the line beneath the text will gone. Then the text character will be vector graphic that you can edit. Spend a lot of time to edit them or try to get those two fonts installed, that's a question.

Theoretically if you could convert all the text to outlines you would be able to work with the document.
To do that you have to open a new Illustrator document. Place the the pdf. Select the menu Object / Flatten transparency. Make sure to check the Convert all text to outlines option and go. You got the whole pdf in curves.

Make a copy of the PDF--open the copy in Acrobat Pro--save as EPS click 'settings' go to 'transparency and flattening(look for the check box that says 'convert all text to outlines'--then open EPS in illustrator and copy 'heading text'--open original PDF in illustrator--delete headings--paste copied 'outline text' into file....then continue with your edits...it's a bit of a workaround...but it should accomplish what you need...
