Deep Freeze is a good protection for computer that used for multi person, like the computers on library and any other public occasion. it'll protect computer from configuration changes. but it's useless for personal computer.

My understanding is that yes, you must unlock Deep Freeze when you want to do Windows Updates.

Turn it off.
I suggest you read the manual that is available from the faronics website, preferably before you screw your computer.

Shouldn't the guest account have minimal permissions already or did you enable extra permissions? The non-administrator accounts should be able to use, but not change anything vital (i.e. they can set a screen saver, but not add a program). I'd check your account settings and make sure everyone is using their own accounts (especially if you need accountability for actions on the computer). You may also want to tweak the local security policy to enforce complex passwords, screen saver password locks, and screen saver activation time.

You can try some uninstall tools, for example absoulty uninstall, Ccleaner

You can also get a free to use program called kill disk it is fairly easy to use you just have to make your cd rom first boot if it is not already (that is in the bios) after you kill disk the drive (which writes nothing but zeros to hd) this will then turn your hard drive into a raw drive which you can install windows just follow directions as you install and format hard drive with ntfs then you can finish install and continue using your computer hope this helps.

Can I still install app and update my windows if i use deep freeze?

Probably not. I don't know what deep freeze does exactly, but doesn't it pretty much wipe and rewrite your C: drive? If it does that, any updates you install will be lost when it wipes and rewrites, I think...
